Healthy Banana Nut Pumpkin Bread Recipe

This time of year has me in the baking mood! Banana bread is a staple in my house! I love it for breakfast or just a sweet snack! You can double the recipe and even store in air tight container or freeze and save for later! (That is if you have the willpower not to eat it all in the first 24 hours😂).


INGREDIENTS

  • 2 cups (280 g) almond flour, or flour of choice*

  • 1/2 – 3/4 cup (150 g) stevia or organic pure cane sugar

  • 1 teaspoon baking powder

  • 1 teaspoon baking soda

  • 2 heaping teaspoons pumpkin pie spice mix

  • pinch of mineral pink salt

  • 1 tbsp ground flax seed (optional, I include these for extra nutrients)

  • 1– 2 teaspoons vanilla extract

  • 1/3 cup water or unsweetened almond milk

  • 1/3 cup coconut oil or applesauce (I recommend applesauce for lower fat)

  • 3-4 extra ripe bananas (brown spots ideal) can freeze and thaw when ready to bake

  • Small handful pumpkin seeds, extra for topping (optional) - I love including these for the extra nuttiness and crunch. Pumpkin seeds are rich in antioxidants, iron, zinc, magnesium and many other nutrients.

  • **Optional 1 scoop pumpkin spice protein, vanilla protein, or your fav choice of protein powder



INSTRUCTIONS

  1. Preheat oven to 350 degrees.

  2. In a medium size bowl, combine flour, baking powder, baking soda, spices and salt.

  3. In another medium bowl, combine bananas, coconut oil/ applesauce, sugar, water/milk and vanilla.

  4. Add the wet mixture to the dry mixture along with the pumpkin puree and mix well.

  5. Careful not to over mix, but be sure there is no flour clumps.

  6. Taste batter, adjusting flavor


or sweetness to your liking. Batter should be thick and a little lumpy.

  1. Pour batter into a lightly greased loaf pan.

  2. Bake for 45 – 55 minutes depending on your oven. Check for consistency with toothpick.

  3. Once done, remove from oven and let cool slightly before serving.

Notes:

  • Store in sealed container to preserve freshness and serve for breakfast or treats.

  • If you do not have baking soda that's fine, you can use 2 tsp of baking powder instead.

  • Can add in sliced zucchini or chocolate chips or other chopped nuts.

  • Can add in canned pumpkin puree as well.

  • You can use this recipe to make muffins!
